Biz Buzz: Blue Mountain Donut (and pizza) to open in Joseph

JOSEPH — Want a fresh doughnut with your coffee in the morning? How about a take-and-bake pizza in the evening?
Blue Mountain Donut Co. will be offering both once it opens Friday, Nov. 3, across from the Post Office in Joseph.
“I learned how to bake from master bakers from a company out of California called BakeMark,” said Jane Sullivan, the proprietor of Blue Mountain. “I fell in love with the baking, and I’ve been baking at home for several years, doing doughnuts.”
In addition to baking, Sullivan did accounting work for BakeMark. Her husband, Jeff, who helps with the shop, retired after 35 years as a pattern-maker for steel casting.
But the doughnut shop is Jane’s venture.
“This is my wife’s dream,” Jeff said.
“This is my baby,” she agreed. “Blue Mountain Donuts is my company that I started.””
Moved from Vancouver
The Sullivans moved from Vancouver, Washington, over three years ago and after some looking around found the former Roots Hair Salon, which had moved to a new location in Enterprise.
They did all the transforming of the business into a doughnut shop themselves, Jane said.
The Sullivans regularly vacationed in the area of Joseph and Wallowa Lake for years before they moved here. They determined there was a market for what they were going to offer.
“When we were camping here, we thought it’d be nice to have coffee and a doughnut,” Jane said.
They have three kids between them and two grandchildren, but the kids aren’t interested in moving to Wallowa County.
“They love it up here, but they’re young and if they don’t have their phones and their video games, they’re not interested,” she said.
Top-notch equipmentJust recently, the Sullivans had their fryer installed.
“This is the second day of the fryer running and that’s why we’re testing all these different doughnuts that we’re going to be making,” Jane said. “We only use high-quality products.”
The fryer is powered by propane, unlike the gas and electric fryers she’s used previously.
But it’s still oil the doughnuts are cooked in. Jane said they cook about 55 seconds per side and then are lifted out to cool.
“This is a totally different beast because you have to figure the temperature and the elevation,” she said, both of which affect the time needed to cook the doughnuts.
They also recently got a “proofer,” a device used to raise the doughnuts.
“What it does is it raises the dough so you can make your Bismarcks, Long Johns, maple bacon bars — with a maple bacon glaze — and your apple fritters,” she said. “We also have a coconut (doughnut), which will get sprinkled with chocolate underneath and maple on the top — that’ll be our Samoa — and doughnut holes and old-fashions.”
They also have an injector, with which they’ll use to inject filing into the doughnuts.
Prices“People can come and look and figure out what exactly they want,” Jane said.
During a recent interview, she hadn’t completely settled on prices, but she estimated she might charge $2.75 for single cake doughnuts, $3.25 for deluxe with fillings; $13 for a bag of a half-dozen regular doughnuts and $32 for a dozen premium doughnuts. Jane said if a customer wants 12 maple-bacon bars or 12 Bavarian cremes or 12 berry-filled fritters, they’ll pay the premium price,
Blue Mountain also will have hot and cold drinks such as coffee or juice.
PizzaThe take-and-bake pizzas are still in the future, Jane said.
“It’s similar to Papa Murphy’s but it’ll be on a higher level,” she said. “We’ve found that if you do it good, they will sell and people will love them and continue to come back.”
But she already has plans for the pizza.
“Once a month we’ll have a weekly special pizza,” she said. “Maybe it’ll be a margarita pizza or maybe it’ll be something else.”
The prices on the pizzas remain in flux, because of vendor uncertainty.
